The Paloma is an easy but refreshing and delicious cocktail you can prepare in a flash. The Paloma is actually the cocktail of choice in Mexico when it comes to tequila. Crazy but Margaritas are actually more popular in the United States just like the celebration of Cinco de Mayo.

Ingredients:

1 can of Squirt (diet or regular) ( Fresca goes really well too and it has 0 calories!)
1 shot of tequila
juice of 1 lime
juice of a 1/4 grapefruit (optional)
ice cubes
Garnish: lime and/or grapefruit

STEP 1
Fill a glass with ice cubes to your liking. Squeeze the juice out of 1 lime and 1/4 of a grapefruit over the ice.
STEP 2
Poor 1 shot of tequila into the glass and fill the rest of your glass with your choice of grapefruit soda. Stir and garnish with a slice of lime and/or slice of grapefruit. Enjoy!

My Favorite Mexican Cocktails- The Adult Version of Agua de Horchata

Agua de Horchata was my favorite drink of choice growing up as a child and now I like to enjoy it with a little extra something… Rum. 🙂

imageThis agua fresca is refreshing, just as the name implies, with a touch of creamy. Usually you can find ready made packets under the international aisle at the grocery store. If you want to make it from scratch a simplified recipe is below. Just add your favorite rum once you prepare the Horchata!

Prep: 15 Mins | Total Time: 1 Hour| Yield: Serves 4

Ingredients:

4 cups whole milk
1 cinnamon stick
1 can (14 ounces) sweetened condensed milk
1/2 cup rice flour
2 teaspoons pure vanilla extract
1/2 cup dark or light rum (optional)
Ice cubes
Garnish: ground cinnamon and cinnamon sticks

STEP 1
Bring whole milk and cinnamon stick to a simmer in a medium saucepan over medium heat. Remove from heat, and transfer to a bowl. Whisk in condensed milk, flour, and vanilla. Refrigerate for at least 30 minutes.
STEP 2
Strain mixture through a fine sieve, and stir in rum if using. Divide among 4 ice-filled glasses. Garnish with ground cinnamon and cinnamon sticks.

My Favorite Mexican Cocktails- The Michelada

I like to think of this one as the Mexican version of a Bloody Mary except with a spicy kick!imageimage

Cinco de Mayo doesn’t have to be all about margaritas, spruce up a Corona by making this daring cocktail. Some like to up the stakes with a shot of tequila on the side. I just like to add more spice than the “normal” person. Truth be told the reason this cocktail intrigues me is the use of  Spicy Hot V8 and Tabasco. I can’t get enough spicy!

1 Corona

Juice of 1 lime

1 Extra lime for garnish and rimming glass

Chili Salt

Ice

Tabasco

1 5.5 oz. Spicy Hot V8 can

Prepare the chili salt for rimming your glass by pouring the chili salt into a small bowl. Rim the glass with a lime and dip rim into chili salt. Then fill the glass half way with ice and squeeze the juice of one lime into the glass. Pour about 3/4 of the Corona into your glass, top with V8, add 5-6 dashes (or more!) of Tabasco and garnish with a slice of lime. Enjoy and try not to sweat too much!

My Favorite Mexican Cocktails- The Classic Margarita

It’s no secret I love margaritas so when Cinco de Mayo comes along I always take it as an excuse to have one. To celebrate Cinco de Mayo this year we are having a few people over this Saturday for a Mexican carne asada. I love whipping up this easy cocktail for my guests but I would much rather enjoy their company than constantly going back to the blender and making a new batch. I decided to switch things up a bit and make them ahead of time and serve them in something more creative than a regular margarita glass. Mason jars were the answer. Besides, who doesn’t love sipping a cocktail out of these cute little containers? I just bought half pint freezer safe mason jars and followed my dad’s recipe.image

4 shots of Margarita mix (any brand, I prefer a low calorie mix)

2 shots of Jose Cuervo Tradicional Tequila

1 1/2 shots of  Triple Sec

Juice of 2 limes

2 limes for garnish and rimming mason jars

Margarita salt to Kosher salt

ice

4 8oz. Freezer safe mason jars with lids

In a blender combine the margarita mix, tequila, triple sec, and the juice of 2 limes. Try and use a lime handheld juicer so you do not get any of the seeds into the blender. If you do not have one use one hand to squeeze the lime and one had underneath the lime to catch any seeds. Then, fill the blender with ice about 3/4 of the way up. Set blender on the crush ice mode until you do not have any ice chunks left and you achieve a slushy consistency. If you are making these margaritas ahead of your party pour the margarita into each mason jar and close each with its lid. Feel free to make several batches to fill more mason jars. Place the prepared mason jars in the freezer.

When you are ready to serve these take them out of the freezer, uncover and immediately use the remaining limes to moisten each mason jar. Then immediately turn the mason jar upside down and dip each rim in margarita salt/Kosher salt. (Make sure to do this before the margaritas start to melt.) After you rim each mason jar with salt take a fork to each margarita and start loosening the slush. Garnish each jar with a slice of lime. Before you know it these will be ready to drink!

Glitter and Champagne

I LOVE movies! I love going to the movie theater, getting a bag of popcorn, a drink and settling down for a good movie. Better yet I love going to midnight showings. They come with a different energy and the audience always seems more engaged. So it is no secret that I look forward to the Oscar’s every year!  I have a lot of fun making my predictions and my favorite part is of course checking out each actress’s dresses.

Make watching the Oscar’s this year extra special by having a Glitter and Champagne Oscar watching party! Here I made the champagne sparkle by toping off each glass of champagne with gold edible stars. The carbonation in the champagne makes the stars dissolve fast but leaves it extra sweet and sparkly. If you prefer more sugar or just want to garnish your champagne glasses even further, color some sugar with gel food coloring and rim each glass with it before pouring your champagne.

After making meringues and letting them cool completely, I made them sparkle by spraying them with gold and silver food coloring spray.

To add another dessert to the mix (and an easy one) I took strawberry flavored marshmallows and dipped them in white chocolate. After the chocolate hardened I decorated them with the gold edible stars to bring in the Oscar’s theme to the spread.

Champagne pairs extremely well with fresh strawberries so I recommend having some as part of your spread!

Finally, don’t forget the popcorn! Pop your favorite flavor or create a popcorn station with different toppings for your guests to flavor their popcorn to their liking. Butter and salt are always good to offer but you can also have garlic, rosemary, powdered cheddar, paprika, olive oil, brown sugar, and cinnamon.

Olympic Pancakes

The 2014 Winter Olympics start this Friday! What better way to celebrate than with a breakfast of champions!

Considering the games run during the month of February I couldn’t resist making the Olympic Rings into hearts. Heart shaped pancaked are always more fun anyway!

These were super easy to make. All you need is pancake mix (I used Bisquick), milk, eggs, food coloring (blue, yellow, black, green, and red), and a heart shaped cookie cutter. Mix the pancake mix with the milk and eggs (following the directions on the box). After you incorporate the ingredients divide the batter into 5 different bowls. Add a few drops of a different color of food coloring to each bowl and mix. Place your cookie cutter on your hot & greased skillet. Add about 1/4 cup of colored pancake batter inside the cookie cutter. Cook until the edges are dry, remove the cookie cutter (you may need to use a toothpick to release the pancake from the cookie cutter), and flip. Cook until golden. Repeat for each color!

For me the Winter Olympics are my favorite. The figure skating, singles and doubles, always has me glued to the television. I can’t get enough of the pretty outfits, the music and how graceful the ballerina’s on ice are.
